Amy's Toasted Chickpeas

Forget about chips—who needs them? We have toasted chickpeas instead.

Okay, maybe chickpeas can't replace the goodness of potato chips but this recipe comes a close second. 

Two cans of chickpeas, rinsed, drained and well dried
Olive oil and salt and seasoning of choice to taste

1) Preheat oven to 400 degrees
2) While oven is preheating, combine chickpeas, olive oil to coat, salt and seasoning in a bowl. Mix until combined.
3) Space chickpeas on a baking sheet and bake until crispy. (Note: this usually takes an hour. Turn the chickpeas at the half hour point and keep an eye on them starting at 50 minutes. There is a small window of time between mushy and crispy. Cooking time will vary.)
