Tangy Brown Rice Salad

What to do with bland brown rice? Jazz it up with some tangy and tasty ingredients!

This recipe is delicious and oh-so-easy.

1 ½ cups cooked brown rice
¼ cup grated carrot
¼ cup diced red pepper
½ cup chopped baby spinach
¼ cup chopped cilantro
Green onions
Combine all ingredients into a bowl.
1 garlic clove, minced
1 T grated onion
¾ cup fresh orange juice
¼ cup fresh lime juice
1 T honey
1/2 t salt
1/4 t ground black pepper
1/2 C canola oil

Add cooked brown rice to a mixing bowl.
Chop, slice and dice your favourite vegetables and add them to the rice.
For the dressing:
In a mason jar, add garlic and grated onion.
Add in fresh squeezed orange juice followed by fresh squeezed lime juice.
Add liquid honey, salt and black pepper.
Pour in the oil and shake to combine
Pour your dressing on top of your rice and mix well.
Let this sit for 30 minutes at room temperature before serving​
